Muffins are not cupcakes

...but they can be equally as yummy.
I have a lot of people say to me 'so I hear you make awesome muffins' or 'was it you that brought those muffins in to work the other day?'

I have a lesson for you. It is called 'Muffins vs Cupcakes 101'.

Muffins can be savoury. Cupcakes can not.
Muffins are generally bigger than cupcakes (ie Texas muffins).
Muffins have barely any icing, if any at all. Cupcakes are laden with the good stuff.
My point is...

If it's a cupcake, don't call it a muffin. If it's a muffin, don't call it a cupcake.

/begin muffin recipe

Kel's Cherry Ripe Muffins

1 cup self raising flour
1 cup caster sugar
3 tbls cocoa
90g unsalted butter, melted
2 eggs
1/2 cup milk
1 tsp vanilla extract
3/4 cup shredded coconut
1 cup Morello cherries, well drained & chopped

Preheat oven to 180 (160 fan forced) and line a Texas muffin tin with muffin liners. Sift flour and cocoa into mixer bowl and add sugar, butter, eggs and vanilla. Use electric mixer to combine ingredients, then stir in coconut and cherries. Spoon into muffin cases and bake for 20 minutes or until muffins spring back when lightly pressed.
