Apple and Cinnamon Muffins

Spice up your morning with these delicious low fat breakfast muffins. The apple and cinnamon complement each other perfectly.


Kel's Apple & Cinnamon Breakfast Muffins
Makes 6 Texas muffins

2 1/2 cups self raising flour
1/2 cup firmly packed brown sugar
1 egg, lightly whisked
1 1/4 cups milk
90g butter, melted
3 medium apples, diced
2 tsp ground cinnamon

Icing
1/2 cup icing sugar
1 tbl butter, softened
1 tbl water
2 tbls crushed walnuts

Preheat oven to 180 degrees celsius and prepare a six-hole Texas muffin tin. Sift flour into a large bowl and stir in sugar and cinnamon. Make a well in the centre and add butter, milk and egg. Mix until combined and then stir in diced apple. Spoon into prepared tin and bake for 25 minutes.

To prepare icing, mix butter, icing sugar and water together until smooth. Spoon onto cooled muffins and sprinkle crushed walnuts on top.
