Summer muffins

I hate hot weather, but I'm willing to endure it for cheap summer fruit. It makes it all worthwhile when you can pick up three punnets of strawberries for $5 and bananas are a measly $1.99 a kilo (a far cry from the cost during the great banana crisis of just a couple of years ago).

In honour of summer, I present you banana and strawberry muffins. And the best bit? No mixer required!

Taste of Summer Banana & Strawberry Muffins
60g butter, melted and cooled
2 cups self raising flour
1/2 cup caster sugar
2 eggs, lightly beaten
1/2 cup milk
1 vanilla bean, split & seeds scraped
1 punnet strawberries, hulled & chopped
2 bananas, mashed

Preheat oven to 200 celsius. Prepare texas muffin tin with muffin papers. Sift flour into bowl and stir in sugar. Make well in centre and pour in milk, eggs and butter. Stir in bananas, strawberries and vanilla seeds until just combined. Bake for approximately 20 minutes or until lightly browned.

Do I need to buy specific "muffin papers"? I love the way they look.

Your latest wedding cupcake samplers look fantastic. I can almost taste them! yum!!

Thanks for the kind words!

I buy those muffin papers from The Essential Ingredient for 10c each. They are essentially just a piece of baking paper stuck together to form a liner.

You can use normal cupcake papers or texas muffin papers but your muffins won't be as big, so you might need to adjust the cooking time a bit.
