I had the good fortune to find cheap blueberries, so I grabbed a punnet and then sat around trying to decide how to use them. I decided upon blueberry muffins.
Blueberry Muffins
makes 6 Texas muffins
60g butter, chopped and softened
1/2 cup caster sugar
2 eggs
1 cup (250ml) milk
1 tsp vanilla extract
2 1/2 cups self-raising flour, sifted

1 punnet blueberries, washed
Preheat oven to 180c (160c fan forced). Line a six hole Texas muffin tin with muffin liners. Cream the butter, vanilla and sugar until smooth and creamy. Add eggs and milk and mix until well combined. Fold in flour until just combined (do not over mix or your muffins will be tough). Gently mix in blueberries. Spoon into prepared tin and bake for 15-20 mins until lightly browned and firm to touch.
