Birthday cupcakes for Liss

Liss is one of my oldest friends - we have been friends since early high school and have remained good buddies despite me living in Melbourne and her living in Horsham with her beau.

It was Liss' birthday celebration last night, and it was held in Ballarat (our home town and a convenient midway point between Horsham and Melbourne). In celebration of her turning the big 2-5 I thought I'd make her a present of a dozen chocolate cupcakes.

The cupcakes were make with Dutch cocoa for an intense chocolate colour and flavour, and were topped with raspberry buttercream. I decorated them with pink glitter and fondant hearts.

I embossed some white fondant using my embossing plates and brushed some white lustre dust mixed with vodka over them to give them a pearlescent look.

I love the oh so pink icing combined with the fondant cut outs - so pretty - really girly.

your cupcakes look gorgeous! What is in your icing? It looks like it pipes very well and I can't seem to find a good recipe

Giz - yep they're quite girly aren't they! Liss is a very girly girl so I thought they'd suit her perfectly :)

Renee - I don't actually use a recipe for my buttercream (I know, I'm odd). I start off by creaming 125-150g butter, then I add about 800g of icing sugar. I add it bit by bit, and I gradually add a little warm water until I have a nice consistency.

I add my essence and colour last.

ahhh! The warm water must be the trick! I made a buttercream yesterday - 125g butter and 1/2 cup of icing sugar and although the butter was soft, it was still to thick (and most likely too cold) to pipe. Damn these 13 degree days!!! Thanks Kel :)

I actually use Fiskar's embossing plates. These are made for scrapbooking but I find they are a lot cheaper than the ones specially made for sugarcraft. I bought these in a pack of about 10 plates. From memory it was about $20. Bargain!
