I ventured into the world of mini cupcakes tonight. I added a couple of tablespoons of cocoa (plus a couple of extra tablespoons of milk) to the vanilla cupcakes recipe and baked them at 180 degrees (fan forced oven) for 8 minutes. The recipe made 36 mini cupcakes.
I iced them with strawberry buttercream (beat butter, icing sugar, strawberry essence and a couple of tablespoons of warm water to form a stiff consistency). They're so cute!
