Banana pancakes

I did the pseudo-wife thing this morning and woke my other half up to banana pancakes. These are an extremely filling pancake, so beware - you'll only need one to fill you up!

Ingredients:
1 egg
2 tbls sugar
3/4 cup milk
1 cup self raising flour, sifted
2 bananas, chopped
2 tsp melted butter

Method:

Whisk sugar and egg together, add melted butter. Add the milk and flour, alternating each and adding a little at a time. Grab a big spoon and fold in the banana. Spoon mixture onto a lightly oiled fry pan. Keep the heat right down as these pancakes are very thick and a high temperature will mean you'll cook the outside and not the inside!

Serve with some chopped banana, maple syrup and whipped butter.

I made these for breakfast this morning Kel, Reuben rated them as "yummy cake banana Mummy" so they must have been good :)
