Matt had been away for the weekend so I made him a welcome home surprise of banana, caramel and choc chip muffins.
2 cups self raising flour, sifted
1/2 cup sugar
1/2 cup milk
1 vanilla bean pod, seeds scraped (or 1 tsp vanilla extract)
2 eggs, lightly whisked
60g butter, melted
2 bananas, mashed
1/2 tin dulce de leche (or you can cheat and use Nestle Caramel Top n Fill)
1 cup chocolate chips (I used couverture 70% for a bit of an extravagant twist)
Preheat oven to 200 celsius (180 fan forced) and line a muffin tin with papers. Combine flour and sugar, and stir in milk, eggs, butter and vanilla. Gently stir in bananas, choc chips and caramel (do not beat the mixture as the muffins may become tough and chewy).
Spoon into prepared muffin tin and bake for 15-20 minutes or until golden brown and muffins spring back when lightly touched. Enjoy!
