Vanilla Bean Cupcakes
makes 12 large cupcakes
125g butter, cubed and at room temperature
3/4 cup caster sugar
1 tsp vanilla extract
1 vanilla pod, seeds scraped
2 eggs
1/2 cup milk
1 1/2 cups self raising flour, sifted
Preheat oven to 180 degrees celsius (160 fan forced) and prepare cupcake tin with cupcake liners. Cream butter, sugar, vanilla extract and vanilla seeds until smooth. Add eggs one at a time. Add half the milk and flour, mix until combined, and then add remaining milk and flour. Do not overmix - mix until just combined.
Spoon into cupcake liners and bake for 14-16 minutes until cakes spring back when lightly touched.
Remove from pan and allow to cool on a wire rack. Leaving the cupcakes to cool in the pan increases the risk of the cupcake liner pulling away from the cake, so always transfer the cupcakes to a rack as soon as possible.
